    Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, remove from heat and cover the pot. Let the eggs sit for 12 minutes.

    Cool and Peel

    Transfer the eggs to an ice bath to cool for 5 minutes. Once cool, gently tap each egg on the counter to crack the shell and peel under running water for easier removal.

    Prepare the Filling

    Slice the peeled eggs in half lengthwise. Carefully remove the yolks and place them in a mixing bowl. Mash the yolks with a fork until smooth.

    Mix Ingredients

    Add mayonnaise, Dijon mustard, white vinegar, paprika, salt, and black pepper to the mashed yolks. Mix until creamy and well combined. Adjust seasoning to taste.

    Add the Twist

    Fold in the chopped chives and a few dashes of sriracha sauce for a spicy kick.

    Fill the Eggs

    Spoon or pipe the yolk mixture back into the egg whites. Sprinkle additional paprika on top for garnish.
