Custard and Toast
Method
Preparation and Cooking
- 1
Make the Custard
In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, and salt until smooth and well combined.
- 2
Soak the Brioche
Dip each slice of brioche bread into the custard mixture, ensuring both sides are well coated. Allow the bread to soak for a few minutes, letting it absorb the custard.
- 3
Cook the French Toast
In a large skillet or griddle, melt the unsalted butter over medium heat. Once melted, place the soaked brioche slices in the skillet and cook for 3-4 minutes on each side until golden brown.
- 4
Caramelize the Sugar
Sprinkle the cooked French toast with brown sugar and use a kitchen torch to caramelize the sugar until it forms a crispy top layer. Alternatively, place the French toast under a broiler for a minute to achieve the same effect.
- 5
Serve
Dust with powdered sugar and serve warm with maple syrup or fresh berries if desired.
