Baking Instructions

  1. 1

    Prepare the ramekins

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

  2. 2

    Melt chocolate and butter

In a double boiler or microwave, melt the dark chocolate and unsalted butter together until smooth. Stir occasionally to combine.

  3. 3

    Mix wet ingredients

In a mixing bowl, whisk together the eggs, egg yolks, granulated sugar, and vanilla extract until light and frothy.

  4. 4

    Combine mixtures

Gradually add the melted chocolate mixture to the egg mixture, whisking until fully combined.

  5. 5

    Add dry ingredients

Sift in the flour and salt, folding gently until just combined. Do not overmix.

  6. 6

    Fill ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  7. 7

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft. The tops should be set but slightly jiggly.

  8. 8

    Cool and Serve

Let the cakes cool for 1 minute, then carefully invert each ramekin onto a plate. Serve immediately with ice cream or whipped cream.
