Prepare the Brisket
Trim any excess fat from the brisket and season generously with salt, black pepper, and smoked paprika.

Sear the Brisket
In a large skillet over medium-high heat, add olive oil. Once hot, sear the brisket on both sides until browned, about 4-5 minutes per side. Remove from heat.

Prepare the Slow Cooker
In the slow cooker, place the sliced onion and whole garlic cloves at the bottom.

Add Brisket and Broth
Place the seared brisket on top of the onions and garlic. Pour the beef broth over the brisket and sprinkle brown sugar and thyme on top.

Slow Cook the Brisket
Cover the slow cooker and cook on low for 8-10 hours, or until the brisket is tender and easily shreds with a fork.

Rest and Serve
Once cooked, remove the brisket from the slow cooker and let it rest for about 15 minutes before slicing. Serve with mashed potatoes on the side.
