    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Boil in salted water for about 10 minutes or until tender. Drain and set aside.

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and place on paper towels to drain, leaving the bacon fat in the skillet.

    Sauté Vegetables

    In the same skillet with bacon fat, add olive oil if needed. Add diced onion and bell peppers. Sauté for 5-7 minutes until softened.

    Combine Ingredients

    Add the cooked potatoes to the skillet with onions and peppers. Crumble the cooked bacon into the mixture. Stir in Pimm's No. 1, lemon juice, maple syrup, salt, and pepper. Cook for an additional 3-5 minutes.

    Scramble the Eggs

    In a separate bowl, whisk the eggs with a pinch of salt and pepper. In another skillet, scramble the eggs over medium-low heat until just set.

    Plate the bacon hash and top with scrambled eggs. Garnish with sliced cucumber and fresh mint leaves.
