Method
Cooking the Pasta

Boil Pasta
Bring a large pot of salted water to a boil. Add fettuccine or linguini and cook according to package instructions until al dente. Drain and set aside.
Making the Beef Gravy Cream Sauce

Make Roux
In a large skillet or saucepan over medium heat, melt the butter. Whisk in the flour and cook, stirring constantly, for 1-2 minutes until a light golden roux forms.

Add Broth
Slowly whisk in the beef broth, ensuring no lumps remain. Bring to a simmer and cook for about 5 minutes, stirring often, until slightly thickened.

Add Cream and Cheese
Reduce heat to low, then stir in the heavy cream and Parmesan cheese. Continue stirring until cheese is melted and sauce is smooth and creamy. Season with salt and black pepper to taste.
Combining and Serving

Toss Pasta
Add the drained pasta to the sauce and toss gently to coat evenly. Let it simmer for 1-2 minutes to allow the pasta to absorb some of the sauce.

Serve
Divide the pasta among serving plates and garnish with chopped parsley and additional Parmesan cheese if desired. Serve hot.
