Pasta

Method

Cook the Pasta

  1. 1

Bring 4 liters of water to a boil in a large pot. Add 1 tablespoon of salt.

  2. 2

Add the linguini and cook according to package instructions until al dente, about 9-11 minutes.

  3. 3

Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Make the Sauce

  1. 4

Heat olive oil in a large skillet over medium heat.

  2. 5

Add the anchovy fillets and stir until they dissolve into the oil, about 2 minutes.

  3. 6

Add minced garlic and red pepper flakes, and sauté for 30 seconds until fragrant.

  4. 7

Add canned tomatoes and crush them with a spoon. Simmer for 10-12 minutes until the sauce thickens slightly.

  5. 8

Season with salt and black pepper to taste.

  6. 9

Stir in the chopped parsley and remove from heat.

Combine and Serve

  1. 10

Add the cooked linguini to the sauce in the skillet. Toss to combine, adding a splash of reserved pasta water as needed to loosen the sauce.

  2. 11

Serve immediately, garnished with extra parsley if desired.
