Main Ingredients

Method

Preparation

  1. 1

Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick spray.

  2. 2

In a shallow bowl, combine eggs and milk, beat until well mixed.

  3. 3

Place the flour on a plate or shallow dish. Place the seasoned bread crumbs in another shallow dish.

Breading the Sole

  1. 4

Dredge each filet of sole in flour, shaking off excess.

  2. 5

Dip the floured fish into the egg mixture, then coat evenly with seasoned bread crumbs.

  3. 6

Heat olive oil in a skillet over medium heat. Lightly brown the breaded filets for 1–2 minutes per side, just until golden. Do not cook through.

Assembly and Baking

  1. 7

Place the browned filets in the prepared baking dish in a single layer.

  2. 8

Spoon marinara sauce evenly over the top of each filet.

  3. 9

Sprinkle shredded mozzarella and grated Parmesan cheese over the sauced filets.

  4. 10

Bake in the preheated oven for 15–20 minutes, or until the fish is cooked through and the cheese is melted and bubbly.

  5. 11

Garnish with chopped fresh parsley if desired and serve hot.
