Creamy Mushroom Sauce

Prepare the Seafood Filling

    Cook seafood

    Heat olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds. Add scallops, lobster, and shrimp. Season with salt and pepper. Cook until just opaque, about 3-4 minutes. Remove from heat and let cool.

Make the Creamy Mushroom Sauce

    Sauté aromatics and mushrooms

    In a saucepan, melt butter over medium heat. Add garlic and shallot, cook for 2 minutes until fragrant. Add mushrooms and cook until softened and browned, about 5-6 minutes.

    Finish the sauce

    Deglaze with white wine and simmer for 2 minutes. Add heavy cream, salt, and black pepper. Simmer until slightly thickened, about 5 minutes. Stir in fresh parsley and remove from heat.

Assemble and Bake the Cannelloni

    Prepare pasta

    If using fresh lasagna sheets, cut into 5x6 inch rectangles and blanch in boiling water for 1 minute. If using dry cannelloni tubes, pre-cook according to package instructions.

    Fill and roll

    Place a portion of the seafood filling on each pasta sheet and roll to enclose. Arrange in a greased baking dish seam-side down.

    Add sauce and cheese

    Pour creamy mushroom sauce over the cannelloni. Sprinkle with mozzarella and Parmesan cheese.

    Bake

    Preheat oven to 375°F (190°C). Bake for 20-25 minutes until bubbly and golden on top. Let rest 5 minutes before serving.
