    Prepare the Ingredients

    Chop the onion, garlic, and bell pepper. Drain and rinse the kidney beans and set aside.

    Cook the Meat

    In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

    Sauté the Vegetables

    Add chopped onion, garlic, and bell pepper to the pot. Sauté until the vegetables are tender, about 3-4 minutes.

    Add the Remaining Ingredients

    Stir in the diced tomatoes, kidney beans, chili powder, cumin, salt, and black pepper. Mix well.

    Simmer

    Bring the mixture to a boil, then reduce heat to low. Cover and simmer for at least 30 minutes, stirring occasionally.

    Serve with Toppings

    Serve hot with your choice of toppings such as shredded cheese, sour cream, chopped green onions, or jalapeños.
