1. Brown the Meat
In a large pot, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
2. Sauté Vegetables
Add the chopped onion, minced garlic, and diced bell pepper to the pot. Sauté for about 5 minutes, until the vegetables are softened.
3. Add Remaining Ingredients
Stir in the diced tomatoes, kidney beans, black beans, chili powder, cumin, salt, black pepper, beef broth, and corn. If using, add jalapeño to taste.
4. Simmer the Chili
Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes to allow the flavors to meld. Stir occasionally.
5. Serve
Taste the chili and adjust the seasonings if necessary. Serve hot, garnished with your favorite toppings like cheese, sour cream, or green onions.
