Cooking Pasta

    Boil Water

    In a large pot, bring salted water to a boil over high heat.

    Cook Spaghetti

    Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve Pasta Water

    Before draining, reserve about 1 cup of the pasta cooking water. Then drain the spaghetti.

Preparing Sauce

    Cook Pancetta

    In a large skillet over medium heat, add the pancetta and cook until crispy, about 4-5 minutes.

    Prepare Egg Mixture

    In a bowl, whisk together the eggs and grated Parmesan cheese until well combined.

Combining Ingredients

    Combine Pasta and Pancetta

    Add the drained spaghetti to the skillet with the pancetta, tossing to combine.

    Add Egg Mixture

    Remove the skillet from heat and quickly pour in the egg and cheese mixture, stirring rapidly to create a creamy sauce. Add reserved pasta water as needed to achieve the desired consistency.

    Season

    Season generously with black pepper and mix until everything is well combined. Adjust the seasoning if necessary.
