Preparation of Base

Mix Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

Whisk Sugar and Egg Yolks
In a separate bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and slightly thickened.

Cook the Mixture
Return the combined mixture to the saucepan and cook over medium-low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 7-10 minutes).

Add Flavoring
Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate for at least 4 hours or overnight.
Flavoring the Gelato

Prepare Fruit or Chocolate
If using fresh fruit, puree it in a blender. If using chocolate, melt it in a microwave or double boiler, then let it cool slightly.

Mix in Flavoring
Once the base mixture is chilled, add the pureed fruit or melted chocolate, mixing well to combine.

Churn the Mixture
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 4 hours to firm up before serving.
