Preparation

    Prepare the Steak

    Remove the New York steak from the refrigerator and let it sit at room temperature for about 30 minutes prior to cooking. This will help it cook more evenly.

    Season the Steak

    Rub the olive oil all over the steak. Sprinkle the kosher salt, black pepper, garlic powder, and rosemary evenly on both sides of the steak. Let it rest for another 10 minutes to allow the seasonings to penetrate.

Grilling

    Preheat the Grill

    Preheat your grill to high heat (around 450°F to 500°F). If using a charcoal grill, ensure the coals are white-hot.

    Grill the Steak

    Place the seasoned steak on the grill. Cook for about 4-5 minutes on one side without moving it to achieve good grill marks.

    Flip the Steak

    Using tongs, flip the steak over and cook for another 4-5 minutes for medium-rare doneness. Adjust the cooking time if you prefer it more or less done.

    Check for Doneness

    Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130°F to 135°F. Remove from grill when desired temperature is reached.

    Let the steak rest for at least 5 minutes before slicing. This allows the juices to redistribute throughout the meat.
