Preparation of Fish

    Marinate the Fish

    In a small bowl, mix together olive oil, lemon juice, garlic powder, salt, and black pepper. Brush this marinade over the fresh fish fillets and let them sit for about 15-20 minutes to absorb the flavors.

    Preheat the Grill

    Preheat your grill to medium-high heat. If using a grill pan, heat it on the stovetop over medium-high heat.

Cooking the Fish

    Grill the Fish

    Once the grill is hot, place the marinated fish fillets on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks.

Assembling the Burger

    Prepare the Brioche Bun

    While the fish is grilling, slice the brioche buns in half and toast them lightly on the grill or in a toaster.

    Build the Burger

    Spread mayonnaise on the bottom half of each toasted brioche bun. Place a lettuce leaf on each, followed by a grilled fish fillet. Top with tomato slices, avocado slices, and fresh dill or parsley if desired. Finish with the top half of the bun.
