Preparation of the Steak

    Season the Steak

    Pat the ribeye steaks dry with paper towels. Rub both sides with olive oil, and then season generously with garlic powder, salt, and black pepper.

    Preheat the Grill

    Preheat your grill to high heat (about 450-500°F or 230-260°C). If using a charcoal grill, ensure the coals are glowing red.

    Grill the Steak

    Place the seasoned steaks on the grill. Grill for about 4-5 minutes on one side, then flip and grill for another 4-5 minutes or until the desired doneness is reached (medium-rare is about 130°F or 54°C).

    Add Rosemary

    During the last minute of grilling, place a sprig of fresh rosemary on top of each steak to infuse flavor.

    Rest the Steak

    Remove steaks from the grill and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute.

    Prepare Baby Potatoes

    Wash the baby potatoes and place them in boiling salted water. Cook for about 15-20 minutes until tender. Drain and set aside.

    Sauté Asparagus

    In a skillet, melt the butter over medium heat. Add the cleaned asparagus and sauté for about 5-7 minutes until tender-crisp. Season with lemon juice, salt, and black pepper.

    Combine Sides

    Once the potatoes are cooked and drained, you can toss them with a bit of olive oil, salt, and pepper for flavor.
