Crust Preparation

    Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the mixture resembles wet sand.

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for about 10 minutes until lightly golden. Remove from the oven and let it cool.

Filling Preparation

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar, mixing until well combined.

    Add the sour cream, vanilla extract, eggs (one at a time), flour, and lemon zest to the cream cheese mixture. Mix until just combined. Be careful not to overmix, as this can incorporate too much air.

    Pour the cream cheese filling over the cooled crust in the springform pan, spreading it evenly with a spatula.

Baking
