Prepare the Bananas
Peel the ripe bananas and slice them into halves or quarters lengthwise, depending on your preference.

Make the Filling
In a bowl, mix the sliced bananas with brown sugar and cinnamon until well coated.

Wrap the Bananas
Take a spring roll wrapper and place it on a clean surface. Add a banana piece at the bottom edge of the wrapper, fold the sides over the filling, and then roll it up tightly. Seal the edge with a bit of water.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Lumpia
Carefully add the wrapped lumpia to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Dust with Sugar
While still warm, dust the fried lumpia with powdered sugar before serving.
Homemade Ganache

Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer, but do not boil.

Melt the Chocolate
Remove the saucepan from heat and pour the chocolate chips into the hot cream. Stir gently until the chocolate is completely melted and the mixture is smooth.

Add Vanilla
Mix in the vanilla extract until fully incorporated.

Let it Cool
Allow the ganache to cool slightly before serving alongside the mini banana lumpia.
