Prepare the Pork
Preheat your oven to 300°F (150°C). Rub the pork shoulder with liquid smoke and Hawaiian sea salt. Wrap the pork tightly in banana leaves or aluminum foil, ensuring it's completely sealed to keep the moisture in.

Prepare the Lomi Tomato
While the pork cooks, dice the ripe tomatoes and slice the green onions thinly. In a bowl, combine the tomatoes, green onions, Hawaiian sea salt, and fresh lime juice. Mix well and set aside to let the flavors meld.

Assemble the Nachos
On a large serving platter, arrange the wonton chips in an even layer. Top the chips generously with the shredded Kalua pig, followed by the lomi tomato mixture. Drizzle sweet chili sauce and wasabi aioli over the top to finish.
