Brew the Base

Prepare the Water
In a clean container, pour 1 liter of water and heat it to around 70-75°C (160-170°F).

Dissolve Sugar
Add 0.5 cups of sugar to the hot water and stir until fully dissolved.

Add Yeast
Once the sugar is dissolved, let the mixture cool to around room temperature (20-25°C or 68-77°F). Add 1 tsp of yeast and stir gently.

Incorporate Citric Acid
Add 1 tsp of citric acid to the mixture and stir well to combine.

Add Flavoring
Mix in 0.25 cups of your chosen fruit juice or extract to the solution and stir thoroughly.
Fermentation

Ferment the Mixture
Cover the container with a clean cloth and let it sit at room temperature for 2-3 days. You should see bubbles forming, indicating fermentation.

Check for Completion
After 2-3 days, taste the mixture. If it has a light fizz and a hint of alcohol, it’s ready for carbonation.
Carbonation

Carbonate the Seltzer
If using a soda maker, transfer the fermented mixture to the soda maker and carbonate according to the manufacturer’s instructions. If using CO2, fill cans with the mixture and seal them, then inject CO2.

Chill the Cans
Refrigerate the carbonated cans for at least 1 hour before serving.

Once chilled, pour the hard seltzer into glasses and garnish with fresh lime wedges and mint leaves as desired.
