Method
Preparation of Fish
- 1
Marinate the Fish
In a bowl, combine the white fish fillets with lemon juice, salt, and black pepper. Toss to coat the fish evenly and let it marinate for 15 minutes.
Batter Preparation
- 2
Make the Batter
In a large mixing bowl, whisk together the all-purpose flour, cornstarch, and baking powder. Gradually add the ice-cold water (and beer if using) to create a smooth batter. The batter should be thick enough to coat the back of a spoon.
Breading the Fish
- 3
Prepare the Breading
In a separate shallow dish, mix together the breadcrumbs, grated Parmesan cheese, paprika, and garlic powder. Remove the marinated fish from the bowl and dip each fillet into the batter, allowing any excess to drip off.
- 4
Coat the Fish
After dipping in the batter, coat the fillets with the breadcrumb mixture, pressing gently to adhere. Set aside on a plate while you prepare the oil.
Frying
- 5
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
- 6
Fry the Fish
Once the oil is hot, carefully lower the breaded fish fillets into the oil, a few pieces at a time. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the fish and drain on paper towels.
Serving
- 7
Serve
Serve the fish hot with lemon wedges and tartar sauce on the side, if desired.
