For the Battered Fish

Prepare the Batter
In a bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in cold sparkling water until the batter is smooth and slightly thickened.

Heat the Oil
In a large, deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish
Dip each fish fillet into the batter, ensuring it’s fully coated. Allow excess batter to drip off.

Fry the Fish
Carefully lower the battered fish into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes per side, or until golden brown and crispy. Remove and drain on paper towels.

Prepare the Potatoes
Peel and cut the russet potatoes into thick fries. Rinse under cold water to remove excess starch, then pat dry with paper towels.

Heat the Oil
In a separate deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the cut fries to the hot oil in batches. Fry for about 5-7 minutes, or until golden and crispy. Remove and drain on paper towels, then sprinkle with salt to taste.
