Method
Preparation
- 1
Wash and Peel Potatoes
Thoroughly wash the Russet potatoes under cold running water. Peel the skin off using a vegetable peeler.
- 2
Cut Potatoes
Using a crinkle-cut knife, cut the potatoes into crinkle-cut fries of uniform thickness, about 1/4 inch thick.
- 3
Soak the Fries
Place the crinkle-cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.
Coating
- 4
Prepare the Coating
In a separate bowl, mix together the cornstarch, salt, black pepper, and paprika until well combined.
Frying
- 5
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 6
Dry and Coat the Fries
After soaking, drain the fries and pat them dry with paper towels. Toss the fries in the cornstarch mixture until evenly coated.
- 7
Fry the Fries
Carefully add the coated fries to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 4-5 minutes or until golden brown and crispy.
- 8
Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with additional salt to taste.
