Preparing the Steak

    Tenderizing the Steak

    Place the beef round steak between two sheets of plastic wrap and pound it with a meat mallet until it is about 1/2 inch thick.

    Seasoning

    Sprinkle both sides of the steak with salt and black pepper.

    Breading Setup

    In one shallow dish, place the all-purpose flour. In another shallow dish, whisk together the eggs and milk.

    Breading the Steak

    Dip each seasoned steak first into the flour, then into the egg mixture, and finally back into the flour to coat well.

Cooking the Steak

    Heating the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until it shimmers.

    Frying the Steak

    Carefully add the breaded steaks to the hot oil and fry for about 4-5 minutes on each side or until they are golden brown. Remove them from the skillet and drain on paper towels.

Making the Sausage Gravy

    Cooking the Sausage

    In the same skillet, remove excess oil leaving about 2 tablespoons. Add the breakfast sausage and cook over medium heat until browned, breaking it up into small pieces.

    Making the Roux

    Sprinkle the flour over the cooked sausage and stir for about 1-2 minutes until combined.

    Adding the Milk

    Gradually whisk in the milk, stirring continuously until the mixture thickens.

    Seasoning the Gravy

    Add salt, black pepper, and red pepper flakes to taste, adjusting the seasoning as needed.

Serving

    Plating

    Place the fried steak on a plate and generously spoon the sausage gravy over the top. Serve hot.
