Method

Preparing the Ribs

    Preheat Oven

    Preheat your oven to 300°F (150°C).

    Season the Ribs

    Pat the baby back pork ribs dry with paper towels. Rub the salt and black pepper evenly over both sides of the ribs.

    Arrange Ribs

    Place the seasoned ribs on a baking sheet lined with aluminum foil, bone side down.

Making the Coconut Jalapeno Sauce

    Combine Sauce Ingredients

    In a medium saucepan, combine the coconut milk, finely chopped jalapeno pepper, soy sauce, brown sugar, minced garlic, lime juice, ground cumin, and cayenne pepper.

    Simmer the Sauce

    Bring the mixture to a simmer over medium heat, stirring occasionally. Let it simmer for about 10 minutes until it thickens slightly.

    Blend the Sauce (Optional)

    For a smoother sauce, you can blend the mixture using an immersion blender or a regular blender until smooth. Return to heat if needed.

Broiling the Ribs

    Apply the Sauce

    Once the sauce is ready, brush a generous amount over the ribs, reserving some for later.

    Broil the Ribs

    Broil the ribs in the oven for about 5-7 minutes, or until the sauce begins to caramelize and the edges are crispy. Keep a close eye to prevent burning.

    Serve

    Remove the ribs from the oven, brush again with the reserved sauce, and let rest for a few minutes before cutting into portions. Serve with additional sauce on the side.
