Prepare the Roux

In a saucepan, melt the butter over medium heat. Add the flour and stir continuously for about 2 minutes until it turns light golden.

Add Milk

Gradually whisk in the milk, ensuring there are no lumps. Continue to cook until the mixture thickens, about 5 minutes.

Season the Mixture

Stir in the finely chopped Serrano ham, nutmeg, salt, and black pepper. Mix well and remove from heat. Let the mixture cool completely.

Form the Croquettes

Once the mixture has cooled, shape it into small cylindrical croquettes, about 5cm long.

Coat the Croquettes

In a bowl, beat the eggs. Dip each croquette in egg, then roll it in breadcrumbs until well coated.

Fry the Croquettes

In a deep frying pan, heat the olive oil to 180°C (350°F). Fry the croquettes in batches until golden brown, about 3-4 minutes. Drain on paper towels.
