Prepare the Cauliflower

Preheat your oven to 425°F (220°C). Remove the leaves and stem from the cauliflower and cut it into florets. Steam or microwave the florets until soft, about 5-7 minutes. Allow to cool slightly.

Make the Cauliflower Crust

Using a food processor, pulse the steamed cauliflower until it resembles rice. Transfer to a clean kitchen towel and squeeze out as much moisture as possible. In a mixing bowl, combine the cauliflower, mozzarella cheese, Chihuahua cheese, egg, garlic powder, Italian seasoning, salt, and black pepper. Mix until well combined.

Shape the Crust

Line a baking sheet with parchment paper. Transfer the cauliflower mixture to the baking sheet and shape into a round crust, about 1/4 inch thick. Bake in the preheated oven for 25-30 minutes until golden brown.

Add Toppings

Remove the crust from the oven and brush lightly with olive oil. Evenly distribute the sliced mushrooms, chopped onions, and sprinkle with Parmesan cheese. Return to the oven and bake for an additional 10-15 minutes until the vegetables are tender and the cheese is melted.

Allow to cool slightly, slice, and serve hot. Enjoy your gluten-free cauliflower crust pizza!
