For the Smoked Sausage

Method

Preparing the Smoked Sausage

  1. 1

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced onions and sauté for about 2 minutes until fragrant.

  2. 2

    Add the Bell Pepper

Stir in the sliced bell pepper and continue to sauté for another 2-3 minutes until the vegetables are tender.

  3. 3

    Cook the Sausage

Add the smoked sausage to the skillet, sprinkle with Cajun seasoning, and cook for an additional 5-7 minutes until the sausage is heated through and browned.

Assembling the Po-Boy

  1. 4

    Prepare the Bread

Slice the French bread loaves in half lengthwise, being careful not to cut all the way through.

  2. 5

    Spread the Mayonnaise

Spread a generous layer of mayonnaise on the inside of each bread half.

  3. 6

    Add the Sausage Mixture

Spoon the sautéed smoked sausage mixture onto the bottom half of each bread loaf.

  4. 7

    Top with Vegetables

Layer the shredded lettuce, sliced tomatoes, and pickles on top of the sausage mixture.

  5. 8

    Drizzle with Hot Sauce

Finish by drizzling hot sauce over the toppings according to your taste.

  6. 9

    Close and Serve

Close the sandwich and cut in half if desired. Serve immediately.
