Prep the Salad Base
1. Prepare the Lettuce
Wash and dry the romaine lettuce. Tear it into bite-sized pieces and place it in a large bowl.
2. Add Vegetables
Halve the cherry tomatoes and add them to the bowl. Slice the cucumber into thin rounds and add to the salad. Thinly slice the red onion and add it in as well.
Cook the Proteins
3. Cook the Shrimp
In a skillet over medium heat, add a bit of olive oil and the shrimp. Cook for about 2-3 minutes on each side or until the shrimp turn pink and opaque. Remove from heat and let cool slightly.
4. Prepare the Chicken
If using leftover chicken, shred it into small pieces. If cooking fresh chicken, grill or bake it until fully cooked, then shred.
Make the Dressing
5. Combine Ingredients
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and black pepper until smooth.
Assemble the Salad
6. Combine Everything
In the large bowl with the salad base, add the cooked shrimp and shredded chicken. Drizzle the dressing over the top.
7. Toss and Serve
Gently toss the salad to combine all the ingredients. Serve immediately.
