    Prepare the Ingredients

    Wash and peel the potatoes, then cut them into bite-sized pieces. Chop the bell pepper and onion into small pieces. Mince the garlic cloves.

    Slice the Sausage

    Slice the smoked sausage into rounds, about 1/2 inch thick.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 5 minutes until they start to soften.

    Cook the Potatoes

    Add the diced potatoes to the skillet. Sprinkle with salt, black pepper, and paprika. Stir well to combine, and cook for about 10-15 minutes, stirring occasionally, until the potatoes are tender and golden brown.

    Once the potatoes are cooked, add the sliced smoked sausage to the skillet. Stir to combine and cook for an additional 5-7 minutes until the sausage is heated through and slightly browned.

    Stir in the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and stir in the fresh parsley.
