Shrimp Preparation

    Marinate the Shrimp

    In a large bowl, combine the buttermilk and hot sauce. Add the shrimp and toss to coat. Cover and refrigerate for at least 30 minutes to marinate.

    Prepare the Breading

    In a separate bowl, mix together the flour, cornmeal, cayenne pepper, garlic powder, salt, and black pepper.

    Coat the Shrimp

    Remove the shrimp from the marinade and shake off any excess liquid. Dredge each shrimp in the flour mixture, making sure they are well-coated. Set aside on a plate.

    Fry the Shrimp

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded shrimp in batches and fry for about 2-3 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

    Prepare the Rolls

    Slice the French bread or hoagie rolls in half lengthwise without cutting all the way through.

    Assemble the Po-Boy

    Spread a generous layer of mayonnaise on the inside of each roll. Layer with shredded lettuce, sliced tomatoes, and fried shrimp. Top with pickles.

    Carefully close the sandwich and serve immediately with extra hot sauce on the side if desired.
