    Prep the Seafood

    In a large bowl, combine the shrimp, crab meat, and cubed fish fillets. Set aside.

    Chop Vegetables

    Chop the onion, bell pepper, celery, and mince the garlic. Set aside.

Cooking

    Make the Roux

    In a large pot or Dutch oven, heat the olive oil over medium heat. Gradually whisk in the flour and continue cooking, stirring constantly for about 15-20 minutes, until the roux turns a dark brown color (similar to chocolate).

    Sauté Vegetables

    Add the chopped onion, bell pepper, celery, and minced garlic to the roux. Sauté for about 5 minutes, until the vegetables are tender.

    Add Liquids and Seasonings

    Pour in the chicken broth and canned diced tomatoes. Stir in the Cajun seasoning, bay leaves, salt, and black pepper. Bring to a boil.

    Simmer the Gumbeaux

    Reduce heat to low, cover, and simmer for about 30 minutes, stirring occasionally.

    Add Seafood

    Stir in the prepared seafood mixture and continue to simmer for an additional 10-15 minutes, or until the shrimp are pink and the fish is cooked through.

    Finish and Serve

    Remove bay leaves, stir in sliced green onions and chopped parsley. Adjust seasoning with hot sauce and additional salt if needed. Serve hot.
