Preparation of the Sausage

    Cook the Sausage

    In a large skillet, heat the olive oil over medium heat. Add the Italian sausage links and cook them until browned on all sides, about 8-10 minutes. Remove from the skillet and let cool slightly before slicing.

    Sauté the Vegetables

    In the same skillet, add the minced garlic, sliced bell pepper, and sliced onion. Sprinkle with Cajun seasoning. Sauté until the vegetables are tender, about 5-7 minutes.

    Slice the Sausage

    Once the sausage has cooled, slice it into bite-sized pieces.

Assembly of the Po’ Boy Sandwich

    Prepare the Bread

    Cut the French bread rolls in half lengthwise. If desired, lightly toast them in the oven for a few minutes.

    Spread the Mayonnaise

    Spread a generous layer of mayonnaise on the inside of each half of the bread.

    Layer the sautéed vegetables and sliced sausage evenly on the bottom half of the bread. Add shredded lettuce, sliced tomatoes, and pickles.

    Drizzle hot sauce over the fillings according to taste.

    Close the Sandwich

    Top with the other half of the bread to form the sandwich. Press down gently.
