    Cook the Potatoes

    Peel and dice the potatoes into bite-sized pieces. Place them in a pot of salted water and bring to a boil. Cook for about 10-15 minutes until they are fork-tender but not mushy. Drain and let cool.

    While the potatoes are cooling, chop the celery and red onion into small pieces. Set aside.

    Hard boil the eggs by placing them in a pot, covering them with water, and bringing to a boil. Once boiling, remove from heat, cover, and let sit for 10-12 minutes. Cool, peel, and chop the eggs.

    In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, and paprika. Whisk until smooth and well blended.
