    Dice the onion, bell pepper, and celery. Mince the garlic. Cut the Andouille sausage into slices and the chicken thighs into bite-sized pieces.

Cooking

    In a large pot, heat a tablespoon of oil over medium heat. Add the diced sausage and sauté until browned, about 5-7 minutes. Remove the sausage and set aside.

    Cook the Chicken

    In the same pot, add the chicken pieces and cook until browned and cooked through, about 8-10 minutes. Remove and set aside with the sausage.

    Sauté Vegetables

    Add the onion, bell pepper, celery, and garlic to the pot. Cook until the vegetables are softened, about 5 minutes.

    Combine Ingredients

    Return the sausage and chicken to the pot. Stir in the canned diced tomatoes and chicken broth.

    Add the Cajun seasoning, bay leaves, thyme, oregano, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
