Preparation

    Rinse and Sort Peas

    Rinse the field peas under cold running water to remove any dirt or debris. Sort through the peas to remove any stones or damaged peas.

    Soak Peas (Optional)

    For better digestion and faster cooking, soak the field peas in water for 4-6 hours or overnight. Drain and rinse before cooking.

Cooking

    Boil Peas

    In a large pot, combine the rinsed field peas and 4 cups of water. Bring to a boil over medium-high heat.

    Season Boiling Water

    Once boiling, add 1 tsp of salt to the water. This will help season the peas while they cook.

    Simmer

    Reduce the heat to low and cover the pot. Let the peas simmer for about 30-35 minutes, or until they are tender. Stir occasionally and add more water if necessary to prevent sticking.

    Sauté Aromatics

    In a separate skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onions are translucent and fragrant, about 5 minutes.

    Combine and Season

    Once the field peas are tender, drain any excess water and add the sautéed onion and garlic mixture to the pot. Stir in 1 tsp of black pepper and 1 tsp of fresh thyme. Mix well to combine all flavors.

    Serve the field peas warm as a side dish or over rice, garnished with additional thyme if desired.
