Add Garlic and Tomatoes
Stir in the minced garlic and cook for an additional minute. Add the canned diced tomatoes (with their juice) and mix well.

Add Broth and Seasonings
Pour in the chicken broth, then add the sliced okra, Cajun seasoning, salt, and black pepper. Bring the mixture to a boil.

Simmer the Gumbeaux
Reduce the heat to low and let the gumbeaux simmer for about 20 minutes, stirring occasionally.

Add Shrimp
Add the peeled and deveined shrimp to the pot and cook for another 5 minutes, until the shrimp are cooked through and pink.

Garnish and Serve
Serve the gumbeaux in bowls, garnished with chopped green onions.

Prepare the Breading
In a bowl, combine cornstarch, all-purpose flour, Cajun seasoning, salt, and black pepper.

Bread the Shrimp
Dredge the shrimp in the breading mixture until well coated.

Fry the Shrimp
Carefully add the breaded shrimp to the hot oil in batches, frying until golden brown and crispy, about 2-3 minutes per side.

Remove the shrimp from the oil and let them drain on paper towels. Serve immediately on top of the gumbeaux.
