Prepare the Calamari
Rinse the calamari under cold water and pat dry with paper towels. Cut the calamari into rings about 1/2 inch thick.

Make the Coating
In a shallow bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and paprika.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Dip each calamari ring first into the egg wash, then coat it with the flour mixture, ensuring even coverage.

Fry the Calamari
Carefully place the coated calamari rings into the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy.

Drain and Serve
Using a slotted spoon, remove the calamari from the oil and drain on paper towels. Keep warm until ready to serve.
For the Spicy Aioli

Combine Ingredients
In a bowl, combine the mayonnaise, minced garlic, sriracha sauce, lemon juice, salt, and black pepper.

Mix Well
Stir the ingredients together until smooth and well combined.

Adjust Seasoning
Taste the aioli and adjust seasoning with extra salt or pepper if needed.

Chill
Cover the aioli with plastic wrap and refrigerate for at least 30 minutes before serving to allow flavors to blend.
