Method
Preparing the Fish
- 1
Marinate the Fish
In a bowl, combine the buttermilk, beaten egg, Cajun seasoning, salt, and black pepper. Add the fish fillets and let them marinate for at least 30 minutes in the refrigerator.
- 2
- 3
Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until hot (approximately 350°F or 175°C).
- 4
Fry the Fish
Remove the fish from the marinade, allowing excess to drip off. Dredge each fillet in the flour and cornmeal mixture until evenly coated. Carefully place the coated fillets in the hot oil and fry for 3-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Po-Boy
- 5
Prepare the Rolls
Slice the French bread or Po-Boy rolls lengthwise, ensuring not to cut all the way through.
- 6
Add the Fish
Place a few pieces of fried fish inside each roll.
- 7
Add Toppings
Top the fish with shredded lettuce, sliced tomatoes, pickles, and a generous spread of mayonnaise. Add hot sauce according to your taste.
- 8
Serve
Serve immediately while hot and crispy, with extra hot sauce on the side if desired.
