    Prepare the ingredients

    Gather and measure all ingredients. Dice the onion, green bell pepper, and celery. Mince the garlic. Set aside.

    Make the roux

    In a large heavy-bottomed pot, heat the vegetable oil over medium heat. Gradually whisk in the flour and cook, stirring constantly, until the roux turns a deep brown color (about 15-20 minutes). Be careful not to burn it.

    Once the roux is ready, add the diced onion, green bell pepper, celery, and minced garlic. Sauté for 5-7 minutes until the vegetables are softened.

    Stir in the crawfish tails, chicken stock, tomato paste, Cajun seasoning, bay leaves, salt, and black pepper. Bring the mixture to a simmer.
