Chop the Cabbage
Remove the outer leaves of the green cabbage, cut it into quarters, and remove the core. Shred the cabbage finely using a sharp knife or a mandoline slicer. Measure out 4 cups and place in a large mixing bowl.

Grate the Carrots
Peel the carrots and then grate them using a box grater or food processor until you have about 2 cups. Add the grated carrots to the bowl with cabbage.

Slice the Bell Pepper
Remove the seeds and stem from the red bell pepper. Cut it into thin strips, then chop into small pieces to measure 1 cup. Add to the cabbage and carrot mixture.

Chop the Green Onions
Trim the roots off the green onions and chop them finely. Measure out 0.5 cup and add it to the bowl.

In a separate bowl, combine 1 cup of mayonnaise, 3 tablespoons of apple cider vinegar, 2 tablespoons of Cajun seasoning, 1 tablespoon of sugar, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Whisk together until smooth and well mixed.

Pour the dressing over the chopped vegetables in the large mixing bowl. Toss everything together gently until all the vegetables are evenly coated with the dressing.
