For the Grits

Method

For the Grits

  1. 1

    Prepare the Liquid

In a large saucepan, bring 4 cups of water to a boil over high heat.

  2. 2

    Cook the Grits

Once boiling, slowly whisk in 1 cup of corn grits. Reduce heat to low, cover, and let simmer for about 20-25 minutes, stirring occasionally.

  3. 3

    Add Cream and Season

After 20-25 minutes, stir in 1 cup of heavy cream, 2 tablespoons of butter, 1 teaspoon of salt, and 1 teaspoon of black pepper. Continue to cook for another 5 minutes until creamy.

  4. 4

    Incorporate Cheese

Remove from heat and stir in 1 cup of cheddar cheese until melted and smooth.

For the Shrimp

  1. 5

    Heat the Oil

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

  2. 6

    Sauté Garlic

Add 2 minced garlic cloves to the skillet and sauté for about 30 seconds until fragrant.

  3. 7

    Cook the Shrimp

Add 1 pound of peeled and deveined shrimp to the skillet. Sprinkle with 1 teaspoon of paprika and 1 teaspoon of cayenne pepper. Cook for 3-4 minutes until the shrimp are pink and opaque.

  4. 8

    Finish with Lemon

Remove from heat, squeeze 2 tablespoons of lemon juice over the shrimp, and toss with 2 tablespoons of chopped fresh parsley.
