Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare the Vegetables

Peel and dice the sweet potatoes and carrots into bite-sized pieces. Chop the red bell pepper into strips and slice the red onion into thin wedges.

Cooking

  1. 3

    Mix the Seasoning

In a large bowl, combine the smoked paprika, cayenne pepper, garlic powder, salt, and black pepper.

  2. 4

    Toss the Vegetables

Add the diced sweet potatoes, carrots, red bell pepper, and red onion to the bowl with the seasoning. Drizzle with olive oil and toss until all the vegetables are evenly coated.

  3. 5

    Roast the Vegetables

Spread the seasoned vegetables evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly charred, stirring halfway through.

Serving

  1. 6

    Garnish and Serve

Once the vegetables are done roasting, remove them from the oven. Chop the fresh cilantro and sprinkle it over the roasted vegetables. Squeeze fresh lime juice on top for added flavor. Serve warm.
