    Prepare the Ingredients

    Thoroughly rinse the shrimp under cold water and set aside. Dice the chicken breast and slice the Andouille sausage. Chop the bell pepper, onion, celery, and mince the garlic.

Cooking

    Sauté the Vegetables

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté until the vegetables are soft, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

    Brown the Meats

    Add the diced chicken and sliced sausage to the pot. Cook until the chicken is browned and cooked through, about 7-10 minutes.

    Add the Rice and Spices

    Stir in the rice, Cajun seasoning, bay leaves, diced tomatoes, salt, and black pepper. Mix well until all ingredients are combined.

    Add the Broth

    Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.

    Add the Shrimp

    Once the rice is cooked, gently fold in the shrimp. Cover and cook for an additional 5 minutes, or until the shrimp are pink and opaque.

    Final Touches

    Remove the bay leaves, taste, and adjust the seasoning with additional salt and pepper if necessary. Serve hot.
