Preparation

    Cook the Meats

    In a large pot, heat the vegetable oil over medium heat. Add the Andouille sausage and cook until browned, about 5 minutes. Remove from the pot and set aside.

    Sauté the Chicken

    In the same pot, add the chicken thighs and cook until browned on both sides, about 6-8 minutes. Remove from the pot and set aside.

    Prepare the Vegetables

    In the same pot, add the diced onion, green bell pepper, and celery. Sauté until the vegetables are soft, about 5-7 minutes. Add the minced garlic and cook for another minute.

Cooking

    Combine Ingredients

    Return the cooked sausage and chicken to the pot. Add the sliced okra, chicken broth, diced tomatoes, bay leaves, cayenne pepper, thyme, paprika, salt, and black pepper.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, stirring occasionally.

    Add Shrimp

    Stir in the shrimp and continue to simmer for an additional 5-10 minutes until the shrimp are cooked through.

Serving

    Serve the Gumbo

    Remove bay leaves. Serve the gumbo over cooked white rice, garnished with chopped parsley and sliced green onions.
