Fried Catfish

Prepare the Catfish
Soak the catfish fillets in buttermilk for at least 30 minutes in the refrigerator.

Mix Dry Ingredients
In a shallow dish, combine cornmeal, all-purpose flour, cajun seasoning, salt, and black pepper.

Coat the Catfish
Remove catfish from buttermilk and let excess drip off. Dredge the catfish in the cornmeal mixture until well-coated.

Heat Oil
In a large skillet or deep fryer, heat oil to 350°F (175°C).

Fry the Catfish
Carefully add the coated catfish to the hot oil. Fry for about 4-5 minutes per side or until golden brown and cooked through. Drain on paper towels.
Coleslaw

Prepare Vegetables
In a large bowl, combine shredded cabbage and shredded carrot.

Make Dressing
In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

Combine and Toss
Pour the dressing over the cabbage and carrot mixture. Toss until well combined. Refrigerate for at least 15 minutes before serving.

Prepare Potatoes
Cut potatoes into fry shapes and soak them in cold water for at least 30 minutes to remove excess starch.

In a large pot or deep fryer, heat oil to 350°F (175°C).

Fry the Potatoes
Carefully add the soaked and drained fries to the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Drain on paper towels and sprinkle with salt.
