For the Fried Alligator

In a large mixing bowl, combine the alligator meat and buttermilk. Make sure the alligator pieces are fully submerged. Cover and refrigerate for at least 1 hour (or overnight for best results).

In another bowl, mix together the cornmeal, flour, Cajun seasoning, salt, and black pepper until well combined.

Heat the vegetable oil in a large, deep skillet or frying pan over medium-high heat until it reaches 350°F (175°C). You can check the temperature using a cooking thermometer.

Remove the alligator pieces from the buttermilk and let any excess drain off. Dredge each piece in the cornmeal mixture, ensuring they are well coated.

Carefully place the coated alligator pieces into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes, or until golden brown and crispy.

Using a slotted spoon, remove the fried alligator pieces and place them on a plate lined with paper towels to drain excess oil. Keep warm while frying the remaining pieces.
For the Spicy Remoulade

In a mixing bowl, combine the mayonnaise, Dijon mustard, hot sauce, minced garlic, paprika, lemon juice, salt, and black pepper.

Whisk the mixture until smooth and all ingredients are well incorporated.

Taste and adjust seasoning if necessary. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
