Crawfish Filling Preparation

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper and sauté until they are soft, about 5 minutes.

Add Crawfish and Seasoning
Stir in the minced garlic, crawfish tails, Cajun seasoning, lemon juice, salt, and black pepper. Cook for an additional 5-7 minutes until the crawfish are heated through and well combined with the vegetables.
Slaw Preparation

Make the Slaw Dressing
In a medium bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Combine Slaw Ingredients
In a large bowl, combine the shredded cabbage and carrots. Pour the dressing over the cabbage and carrots, and toss until evenly coated. Set aside to let the flavors meld.

Assemble the Tacos
Place a generous spoonful of the crawfish filling onto each tortilla. Top with a handful of slaw and a sprinkle of chopped cilantro.

Serve the tacos with lime wedges on the side for squeezing over the top.
