    Cook the Rice

    In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice, cover, and reduce heat to low. Cook for about 18 minutes or until all the water is absorbed. Fluff with a fork and set aside.

Cooking the Etouffee

    Sauté the Vegetables

    In a large pot or Dutch oven, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables are soft.

    Add Garlic and Spices

    Stir in the minced garlic and cook for an additional minute. Then, add salt, black pepper, cayenne pepper, paprika, thyme, and the bay leaf. Mix well.

    Incorporate the Crawfish

    Add the crawfish tails to the pot and stir to combine. Cook for about 2-3 minutes.

    Add Broth

    Pour in 2 cups of chicken or vegetable broth and bring the mixture to a simmer. Reduce heat to low and let it cook for about 15-20 minutes, stirring occasionally.

    Finish with Butter

    Remove the bay leaf and stir in 2 tablespoons of butter until melted and combined. Adjust seasoning if necessary.

Serving

    Serve the Etouffee

    Spoon the crawfish etouffee over the cooked rice. Garnish with chopped green onions. Serve hot.
