Prepare the Mixture
In a mixing bowl, combine the cooked crawfish tails, cornmeal, all-purpose flour, chopped green onions, minced garlic, cayenne pepper, salt, and black pepper. Mix until well combined.

Form the Balls
Using your hands, take small portions of the mixture and roll them into balls, about 1 inch in diameter.

Heat Oil for Frying
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Crawfish Bites
Carefully drop the crawfish balls into the hot oil in batches. Fry until golden brown, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.

Mix the Sauce
In a small bowl, combine the mayonnaise, ketchup, hot sauce, and lemon juice. Stir until smooth and well combined.
