Dipping Sauce

Method

Crawfish Bites Preparation

  1. 1

    Prepare the Mixture

In a mixing bowl, combine the cooked crawfish tails, cornmeal, all-purpose flour, chopped green onions, minced garlic, cayenne pepper, salt, and black pepper. Mix until well combined.

  2. 2

    Add Eggs

Crack the eggs into the mixture and stir until the eggs are fully incorporated and the mixture is sticky.

  3. 3

    Form the Balls

Using your hands, take small portions of the mixture and roll them into balls, about 1 inch in diameter.

  4. 4

    Heat Oil for Frying

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Crawfish Bites

Carefully drop the crawfish balls into the hot oil in batches. Fry until golden brown, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels.

Dipping Sauce Preparation

  1. 6

    Mix the Sauce

In a small bowl, combine the mayonnaise, ketchup, hot sauce, and lemon juice. Stir until smooth and well combined.

  2. 7

    Serve

Serve the crispy crawfish bites hot with the tangy dipping sauce on the side.
